Mexican Bean Soup

Jain Mexican Bean Soup

Serving: 2 Person

Ingredients :

  • 2 cups Tomato Puree
  • 1 cup Boiling Water
  • 1 cup Boiled Rajma(Red Kidney Beans)
  • 1/2 cup Boiled Hakka Noodles
  • 1/2 cup Boiled and Chopped Babycorn
  • 1 tsp chopped Jalepenos
  • 1 tsp Chopped Mint Leaves
  • 1 tbsp Oil
  • 1 tsp Tomato Ketchup
  • Salt To Taste
  • 1 tsp Sugar
  • 1 tsp Soy Sauce
  • Pepper Pwder To Taste
  • Nacho Chips to Serve

Method :

Boil  cup noodles in 2 cup water for 5-8 mins in microwave. When boiled, strain noodles and run cold water on it. Add 1 tsp of soy sauce and toss the noodles so they do not stick to each other. Boil baby corn for 5 mins in microwave,strain and keep it aside. Soak rajma for atleast 4-6 hours and pressure cook it till soft. Drain and keep it aside.

Heat oil in a pan and add mint leaves,jalepenos,babycorn and rajma. Saute them and add salt,pepper,sugar to it. Add tomato puree,boiling water and tomato ketchup.(Add cornflour paste to soup if very liquid in consistency). Bring the soup to a boil and add boiled noodles,

Add crushed nacho chips on soup and serve hot.

    1. Hey Khushi,jalepenos are optional so its okay if you dont have it. For Tomato Puree,boil 2 tomatoes in a cup of boiling water and puree them into a mixer grinder. Strain it through a strainer to get a smooth puree. Add boiling water to soup according to the consistency of your puree.
